I actually like the resulting loss-of-sharpness, when I make baked mac and cheese with sharp or extra sharp cheddar (though the one time I accidentally used mild cheddar I did not care for the results -- instead of macaroni and cheese, it tasted more like macaroni and cream sauce). And the pimento mac, IMO, also tasted closer to cream sauce than cheese sauce. Even if pimento cheese were exactly the same price as the cheddar I use, rather than noticeably more expensive, I'd still prefer the cheddar for making mac and cheese.

Yeah, I don't like super creamy bechamel vibe to my mac and cheese for that reason. I've had more creamy mac and cheese that tastes like flour than I care to contemplate.

To be clear, when I complained about macaroni tasting like "cream sauce" rather than "cheese sauce" I'm specifically talking about the taste, not the texture. I like cream sauce in its place, but not when I'm specifically in the mood for cheese -- though even when I specifically want the cheese taste, I do prefer the cheese to have more of a creamy texture.

This could in Raising Little Liberty Lovers, but there's a joint here in town called Jus' Mac. They do a good mac and cheese, but nothing mindblowing. I took the tr0gling there once because, hey, all American kids like (or will eat) mac and cheese. In response I got this immortal complaint:

"I didn't want cheese on my mac and cheese!"

Also, in response to Warren, the easy man's cheese sauce is Campbell's Cheddar Cheese soup, heavy cream, and cheese to taste.

On this road we differ. Stove top aside but that is a different and inferior beast compared to baked. Baked is a vessel for good Cheddar treated with heat and pasta infused with melted milk and cheese.

I melt the cheddar into the milk (plus a bit of butter and flour), then bake it with the pasta.
