Food

There may be something about trotters having an extraordinary amount of collagen relative to other pork bones. I had the same experience. Thin unpleasant broth after 5 hours. My resolution was to start with dashi first then use pork bones in that next time. Edit: Ahh I see yours wasn’t thin. That’s ...

Re: the entirely civil and thoughtful israel thread

It’s a low bar to be called anti Semitic in any Israel adjacent topic. As with being called a racist, you have to sort of look past “can I say anything without anyone calling me that and trying to crank it up on social media”. The answer is no you can’t, not on any of a dozen topics. That’s just whe...

In some dimension yes, but you can get pretty perverse land use regs that will lock up value for along time.

Re: Gentry from the block

The building was sitting on a pile of gold bars that were formerly locked up in the basement of a building serving very few people. To Nicole's point, and my general point related to gentrification issues, it's super strange to say it's better to keep the gold bars locked up than to liberate them th...

Re: Calling 2020 for Entropy

There's a default bias in many people toward near term consumption. If you ask those 80%, regardless of their income levels up to very high levels of income, they will all say they can't possibly save. Almost all of them are wrong. You have to be down in the bottom half of the bottom quintile of inc...

Re: Calling 2020 for Entropy

To the extent that’s a result of choices it’s self destructive and broadly harmful to the economy. A savings mentality to get you to a say $1,000 you can use if you need it is life changing.

Re: Food

By the way if I were making that I'd strongly consider using sauteed kimchi (can caramelize in a bit of sesame oil if you want) in lieu of the bulk of aromatics in that recipe. I would add green scallion ends at the end and white ends at the beginning with the kimchi. I would consider a shot of soy ...

Re: Food

Half cooked or "ramen egg" with lava like yolk is perfect for me. On a large egg that's 6 mins 45 seconds of boil then the ice bath. Pretty precisely that time. I can deal with runny yolk and set whites - that's fine too. I can't abide fully cooked yolks. If you leave it in cast iron the carry over ...

I love shakshuka type things but I have a real problem controlling egg doneness. There is substantial variance between the first egg that goes in and the last, carryover cooking is exacerbated by sauciness and to me fully solid yolk is trash food outside of a few special cases.

The fear of disrupted flows is a core piece of the puzzle for negative behaviors like over insurance and under saving though. People will spend thousands every year to alleviate the worry that once every 10 years they might need to write a $1,000 check.

Re: Fragments of an avotoast anthropology

You and I see this differently for a lot of reasons but one of them is kinda like - a 10 year old may have a set of expectations about the world that is wholly unreasonable - almost certainly does have those expectations. You don't give a 10 year old whatever they want nor subject them to the state ...
