That's interesting. ... What are some examples of "moldy" meat varieties?
Salami
A white covering of either mold or flour helps prevent photo-oxidation of the meat and rancidity in the fat.

Re: Tiny Triumphs

I hacked a tiny, USB-powered ultrasonic humidifier so that it would work with a PID controller, so I can moderate the RH inside a curing chamber I'm building out of a small refrigerator. Google translate could not translate this from geek to geezer. Oh, I speak jive meat geek. Jasper likes old, som...

I learned how to make Chinese Hand Pulled noodles with braised beef today. It was really good. The last time I had it was in the Muslim part of Shenzhen.

Re: Rules, RVs, and a four-story phallus: the HOA thread

HOA passes a new rule that your garage door must be left open during the day (even if you are not home).
In addition to that, all citizens will be required to change their underwear every half-hour. Underwear will be worn on the outside so we can check.

There is a flashback to the late 70's / early 80's. My mom had that same orange and avocado green set of tupperware.

I tell young people (who don't know what they want to do) to get a welding degree. Even though robotic welders exist, they are very limited in the welds they can make. Good welders are in demand. A certificate can be had for anywhere from 12 weeks to less than 1 year of school. Starting pay is about...

I used to sign my very atheistic friend up for the Watchtower. I once sent a registration card in his name for a monastery in Nebraska. I got him ordained through the Universal Life Church (he officiated our wedding later and has gone on to officiate for 3 other couples).

Negative 21 degrees F on Sundee mornin'. The minivan wouldn't go up the slight hill to the main road until it warmed up an additional 15 minutes. The buttons on the gas pump didn't work. Then on the way back down, the antilock brakes kicked in but in slow motion. There are 3 freighter ships in the b...

I finished Never Let Me Go by Kazuo Ishiguro. Well done but a little slow. Started Radicals for Capitalism by Brian Doherty but only got through the 1st chapter. Pretty boring for for all that radicalism. Does it get better? Instead I got halfway through How to Talk Dirty and Influence People by Len...

The Marvelous Mrs. Maisel is terrific! Okay, I'm a bit biased because of the stand-up comedy premise, but if you have Amazon Prime, at least watch the first episode.

Re: Petty annoyances

I actually kind of liked jury duty, when I got to actually be on the jury . Just sitting around the waiting room all day is no fun, but actually going through the whole process of the trial is important and worthwhile, I think. I found it interesting how sincerely appreciative everyone at the court...
